Not gonna lie, the only waffles I used to eat were from free hotel breakfast counters. You know the one big waffle maker with the batter dispenser. One giant belgium waffle made with who knows what covered in syrup. I wouldn’t classify myself as a Type A personality, although I made sure I used just enough syrup to perfectly fill each tiny square.

Fast forward to a morning making pancakes one at a time in a skillet and a quick waffle flashback. I decided to purchase a waffle maker. Four perfect waffles in half the time and everyone can eat a warm breakfast together!

Now, there are several options for waffle makers. You can go for Belgium Waffles, which are the big round ones. Or the smaller square waffles work great for serving several people a smaller portion. Make sure to have a non-stick spray to prevent a goopey burned mess. I use coconut oil spray on my waffle maker before spooning on the batter and it works perfectly!

Ingredients

  • 1 1/2 cups ( 375 ml) almond milk
  • 2 cups (500 g) wheat flour
  • 1/4 cup (62.5 ml) coconut oil
  • 1/4 cup (62.5 ml) creamy peanut butter
  • 1/4 cup (62.5 ml) agave nectar substitute for honey
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp nutmeg
  • 1 pinch sea salt
  • 1 1/2 tsp baking powder

Instructions

  1. Whisk all ingredients together until smooth in a medium bowl.
  2. Spray waffle iron with coconut oil non stick spray.
  3. Pour batter evenly across waffle iron.
  4. Cook until golden brown.
