Vegan Beet and Dark Chocolate Chunk Ice Cream

Recipe for Vegan Beet Chocolate Ice Cream, a non-dairy frozen treat that doesn't require an ice cream machine! Made with fresh pureed beets, dark chocolate chunks, and coconut milk.

Ingredients

  • 3 cooked and chopped large beets chop off leaves and long root, boil beets in water 20-30 min, run under cool water, peel off skin, chop into small pieces
  • •2 13.5oz cans coconut milk
  • •¼ cup local honey
  • •1.5 tsp Vanilla
  • •½ cup chocolate chunks
  • •coconut flakes for topping

Instructions

  • Blend beets and ½ cup coconut milk until smooth
  • Add beets,milk, honey, vanilla in pot on low until melted and well mixed
  • Let cool and pour into freezer safe container, stirring and adding in chocolate chunks until solid ( I stir about every 30 min, for first 1.5hrs, or you can use an ice cream maker)
  • Freeze over night
  • Serve with coconut chips!!

Notes

**will have sorbet consistency since not using ice cream maker, let thaw a little before scooping**
