Coconut Pistachio Granola

Coconut Pistachio Granola made with maple syrup, sunflower seeds, flax seeds, toasted coconut flakes, and pistachios. Easy homemade granola recipe!

Ingredients

  • 3 Cups Whole Oats
  • 1 Cup Shelled Pistachios
  • ½ Cup Sunflower Seeds
  • 1 Cup Coconut Chips
  • 2 Tbsp Flax Seeds
  • 2 tsp Kosher Salt
  • ¼ Cups Light Brown Sugar
  • Cup coconut Oil melted
  • ½ Cup Maple Syrup

Instructions

  • Preheat oven to 350 F (176 C) and line a large rimmed baking tray with parchment paper.
  • In a medium bowl mix together oats, pistachios, sunflower seeds, coconut chips, and flax seeds.
  • In separate bowl whisk together coconut oil ,maple syrup, brown sugar, and salt.
  • Pour wet mixture into dry mixture, stirring with spatula until evenly coated.
  • Bake at 30-35 min or until golden brown, stirring 2-3 times to prevent burning.
  • Allow to cool completely before serving.
  • Once cooled it will become crunchy!
  • Store in air tight container at room temperature.
