Chocolate Bourbon Pecan Pie

Ingredients

Crust

  • 1 ¼ cups all purpose flour
  • 2 tsp sugar
  • ¼ tsp salt
  • 1 stick cold unsalted butter cut into thin slices
  • ¼ cup ice water

Filling

  • 2 cups whole pecans
  • 3 large eggs
  • ¾ cup brown sugar
  • cup light corn syrup can replace for honey, but will alter flavor slightly
  • 1 tsp vanilla
  • 2 Tbsp melted unsalted butter
  • 3 Tbsp bourbon this pie made with Bowman Brothers
  • ¾ cup mini semisweet dark chocolate chips

Instructions

Crust

  • Sift flour into bowl, whisk in sugar and salt. Add butter and pulse all ingredients in food processor. (or use your hands like me!)
  • Place mixture in bowl and stir in the ice water. Knead the dough 2 or 3 times on a lightly floured surface and pat into a ball. Wrap in plastic and refrigerate for at least 30 minutes.
  • Roll out dough onto floured surface to a 12" circle. Place dough into pie pan. Gently pressing into corners and trimming off any excess. Refrigerate until firm.

Filling

  • Toast pecans at 375 F for 8 minutes.
  • Thoroughly mix all remaining ingredients in a bowl.
  • Pour filling into pie crust.
  • Place pecans on top of filling in a design, or chop and sprinkle.
  • Bake at 375 F for 55 minutes or until crust pulls away from sides of pie dish.
  • Cool for 15 min.

Notes

Serve warm with a scoop of ice cream!!!
