Toasted Marshmallow Campfire Cocktail

It's finally cold outside and I couldn't be happier to share my Toasted Marshmallow Campfire Cocktail with you. Made with marshmallow syrup, vanilla rum, Irish Cream, and splash of whiskey. Garnish with a toasted marshmallow. Enjoy this cocktail served hot while snuggled up next to a fire pit or fireplace during the cooler months.

Yep, we've entered the cozy, time of year where flames, marshmallow and booze are a daily occurrence!

Ingredients

Marshmallow Simple Syrup
  • 1 Cup (250 ml)
  • 1 Cup (200 grams) Granulated Sugar
  • 10 Marshmallows, regular sized (not jumbo or mini)
Campfire Cocktail
  • 1.5 oz Irish Cream
  • 1.5 oz Vanilla Rum
  • 1 oz Marshmallow Simple Syrup
  • Splash Whiskey
Garnish
  • Roasted Marshmallow

Method
 

Marshmallow Simple Syrup
  1. In a small saucepan on medium heat bring water and Granulated Sugar to soft bubble. Once sugar is dissolves turn up to medium high heat and add 10 regular sized marshmallows.
  2. Stir until marshmallows have dissolved. Strain through a mesh sieve into a small bowl and set aside.
Campfire Cocktail
  1. Measure and combine marshmallow simple syrup, Irish cream, and vanilla rum. Warm on the stove, or in a microwave safe mug. (serve warm, not super hot)
  2. Transfer to small Irish Coffee glass.
  3. Next, garnish with a single marshmallow on a bamboo pick. Light marshmallow on fire with kitchen torch and toast to desired crispness.

Notes

**You will have leftover marshmallow syrup. Store syrup in an airtight container in the fridge. Use for more cocktails or pour on desserts.
